I was just on a long weekend trip with some girlfriends, and we got to talking about meal planning.
We are all trying to eat better these days, so we like to keep dinner on the healthier side when possible. And we all felt like we were in dinner ruts.
One friend said she always forgets how she makes the meals and never likes to try the same recipe twice, so she’s always on the hunt (she’s our friend who likes excitement LOL).
Another friend said she just makes the same old recipes all the time and her kids are starting to complain.
I feel like I make the same recipes so often we all get sick of them, and then I get stuck not knowing what to make that’s new and we end up ordering take out!
So in honor of all the women out there who need some new meal inspo, I decide to find a handful of dinner recipes for us all to try out!

1. Garlic Butter Salmon Scampi
I love salmon so much for it’s high Omega three content, satisfying fats, and protein punch.
Only 1 of my 3 kids loves it as well, so I’m trying to make it different ways to introduce it to their meal time regimen.

3. Creamy Pasta with Hidden Zucchini Sauce
I love a good healthy twist on dinner, not only for my kids, but for me and my husband as well!
This recipe sounds so easy and healthy to boot! I would personally serve it as a side with baked chicken to pump up the protein in addition to the hidden veggies.

I just love a good twist on a classic idea and this recipe combines two of my family’s favorite things – pizza and Mexican food!

5. Butter Chicken Pasta
Being half Indian myself, this recipe speaks to my soul!
My kids have always been exposed to spicy food, so this will fit in nicely to our meal rotation. I can’t wait to try this out!

6. Easy Crispy Potato Tacos
My youngest daughter is dairy free, so I like finding recipes that are good with and without cheese / sour cream so we can set it out for the dairy eaters, and she can skip it.

I haven’t had something like this in a LONG time because I became allergic to sesame years ago.
