I’m sometimes a bit of a haphazard baker – with a million things going on in a busy home, sometimes I need a quick no-bake dessert that doesn’t need my full attention and I don’t have to worry about burning!
Now that my kids are old enough to need items for a bake sale or want to take food for exchanges at Christmas, I need my go-to recipes to keep my sane!
These No-Bake Cookie Dough Truffles are perfect for the busy mom who wants to make a treat but can’t commit to a time intensive recipe!
No-Bake Cookie Dough Truffles Recipe
Now, I’ve made these truffles a few times and personally, I like my chocolate with a touch of good quality sea salt sprinkled on top.
But if you’re not into that salty-sweet flavor combination, these no-bake cookie dough truffles are still delicious without it!
(Even the kids like it with the touch of sea salt, but when I send them in as a classroom snack, I tend to leave the salt off.)
No Bake Recipe with Cheater Cookie Dough!
Basically, we make a cheater cookie dough with no eggs or raw ingredients that would require cooking to stabilize (like milk) and form the dough into bite-sized balls.
(Did you know you can buy safe-to-eat cookie dough at the grocery store now!)
Firm them up in the freezer and then dip them into a milk chocolate coating for an indulgent cookie dough truffle.
Instead of the sea salt, you could add a drizzle of white chocolate or candy coating, or even some fun & festive sprinkles.
There really is no right or wrong way to enjoy your No Bake Cookie Dough Truffles!
Ingredients
Method
- Blend the butter and brown sugar until light and fluffy, about 2 minutes.
- Add in the vanilla and beat again.
- Slowly mix in the flour until fully incorporated.
- Add the chocolate chips, adding more or less to your preference.
- Roll the cookie dough into balls and place in the freezer for 10 minutes.
- Melt the chocolate chips and shortening for the dip in the microwave, heating for 30 seconds and then stirring to check the consistency.
- Remove the cookie dough balls from the freezer and dip into the chocolate mixture to coat completely.
- Set the cookie dough truffles on a lined baking sheet to dry and allow the chocolate to set. Sprinkle with sea salt before the chocolate is set, if desired.
What did I tell you? Super easy, even for the distracted mom!
The great thing about this recipe (other than it being no-bake) is that you can come back to it and restart as many times as you need.
You can re-set the cookie dough balls in the freezer, you can re-melt the chocolate – nothing is super time-sensitive or requires your complete commitment.
Save your energy and focus for the kids and make dessert as easy as possible.
