The other day, I picked up some zucchinis from the discount vegetable bin at the store. They looked like they would hold up for up to a week in the fridge, so I bought them not knowing what I was going to do with them.
I know the kids aren’t big zucchini or squash fans (I wasn’t either until I was over 30 years old…something about them just never appealed to me although I love all kinds of veggies), so I wasn’t planning on forcing this bag of zucchini on them.
I wanted to eat them, though, and decided to think outside the box.

I decided the best thing would be to try out a new recipe because all I have in my arsenal are zuchinni side dish ideas, and I didn’t think I could eat 2 lbs worth of zucchini side dishes myself (my husband doesn’t like them either!).
So here’s my test run of a new recipe I made up. Zucchini Pizza Boats!
