A small chalkboard menu displays the message "Tonight's Choices: Take It or Leave It" in white and green text. The sign sits on a wooden surface with a fork and knife on either side, playfully hinting at what's for dinner.

Halved and hollowed-out zucchinis are arranged on a baking tray, transforming into Zucchini Pizza Boats in preparation for stuffing.

Zucchini Pizza Boat Instructions Step 1 - Prepare the Zucchini "Boats" Cut zucchini in half length wise and scrape out any mushy seed insides with a spoon. This gets rid of some excess water so the pizzas aren't waterlogged when done and also gives you a tidy little spot to place the toppings without having them spill over the side during the cooking process. Step 2 - A Little Bit of Sauce Goes a Long Way Next, spoon in approximately 1 tbsp pizza sauce, give or take a bit depending on the size of each zucchini half. Resist the urge to fill up the boat with sauce to the rim. If you do, Keep Reading

Step-by-step assembly process of Zucchini Pizza Boats. Step 1: Halve zucchinis and scoop out seeds. Step 2: Fill zucchinis with marinara sauce. Step 3: Top zucchinis with shredded cheese. Step 4: Add pepperoni slices on top.

The other day, I picked up some zucchinis from the discount vegetable bin at the store. They looked like they would hold up for up to a week in the fridge, so I bought them not knowing what I was going to do with them. I know the kids aren't big zucchini or squash fans (I wasn't either until I was over 30 years old...something about them just never appealed to me although I love all kinds of veggies), so I wasn't planning on forcing this bag of zucchini on them. I wanted to eat them, though, and decided to think outside the box. ==> Click here for step-by-step instructions I Keep Reading

Text in stylized fonts reads "the BEST Fish Tacos Recipe EVER" on a white background. The words "BEST" and "RECIPE" are in pink with a retro style, while "Fish Tacos" is in light gray, and "EVER" is within bright green circles, highlighting that this truly is the best fish tacos recipe you'll ever find.

Try the best fish tacos recipe ever! I've been wanting to try my hand at making fish tacos for quite some time. I never seem to get around to it, probably because I'm intimidated by the thought of choosing the right fish and proper coating and cooking method, coming up with the right toppings, and finding the time to make it in the evening when my kids are on best behavior countdown to melt down. That, and the fact that I almost never love a dish the first time I make it (I'm pretty hard on myself when it comes to getting recipes just right), I just never took the plunge. Until Keep Reading
