Zucchini Pizza Boat Instructions
Step 1 – Prepare the Zucchini “Boats”
Cut zucchini in half length wise and scrape out any mushy seed insides with a spoon. This gets rid of some excess water so the pizzas aren’t waterlogged when done and also gives you a tidy little spot to place the toppings without having them spill over the side during the cooking process.
Step 2 – A Little Bit of Sauce Goes a Long Way
Next, spoon in approximately 1 tbsp pizza sauce, give or take a bit depending on the size of each zucchini half. Resist the urge to fill up the boat with sauce to the rim. If you do, it will bubble over a lot during the cooking process.
Step 3 – Top with Shredded Cheese
I used a couple different kinds of leftover cheese. I think just about any cheese that will melt would work just fine here.
Step 4 – Add Pepperoni!
I used the Hormel 25% Less Fat kind. I think it’s lower fat without sacrificing flavor. Feel free to use full fat pepperoni here, though. With the fat calories you save from not eating real pizza crust, you can afford to do that! 🙂
Healthy Pepperoni Pizza
I wouldn’t have believe it unless I made it myself. Finally, I have a healthy pepperoni pizza alternative! The real test? My husband came home from a work trip, saw these, and immediately ate 3 of them. He said they were delicious! Coming from a self-proclaimed meat and potatoes guy, that’s saying something!
