I love that my crock pot enables me to feed my children easy, healthy meals on busy days when it would be all too easy to justify some take-out or delivery.
I like having go-to recipes for my extra busy days. Days when I go to the gym or run errands, shuttle kids to and from school, take everyone to gymnastics or swim lessons, and barely have time to think let alone plan a real dinner! And I love having a piping hot dinner on cold winter days.
Enter: Chicken Pot Pie in a Crockpot!
Easy Crockpot Chicken Pot Pie
This crock pot chicken pot pie is an easy comfort classic that can be ready to eat in just four hours.
Juicy, perfectly cooked chicken.
Flavorful vegetables that the kids will actually eat.
Thick, properly seasoned gravy.
And those fluffy, crumbly buttermilk biscuits.
With just a little bit of effort, this meal delivers on so many levels.
The only caveat is that I cooked my biscuits in the oven – but I used an easy boxed biscuit mix so even that took no time at all. There are slow cooker recipes that claim to produce delicious biscuits in the crock pot, but from what I can tell those biscuits are more like dumplings and not the crispy buttermilk biscuits I’d want topping my chicken pot pie.
Meal Planning Made Easy!
Ingredients
- 4 chicken breasts or thighs
- 2 cans cream of chicken soup
- 4-5 sweet potatoes
- 1 cup chicken broth, or 1 bouillon cube
- 1 onion
- 2 stalks celery
- 4 carrots
- 4 cloves garlic
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 1 cup frozen peas
- 1 batch biscuit mix
- 1 tablespoon milk or cream
Instructions
- Place your chicken breasts directly into the crock pot.
- Chop up all of your vegetables and add them to the slow cooker, on top of the chicken. (Omit the peas for now.)
- Add the two cans of cream of chicken and chicken broth or bouillon.
- Add water to bring the liquid level to the top of the vegetables, if needed.
- Add the bay leaf and thyme.
- Turn your crockpot on - on high, your chicken pot pie will be ready in approximately 3 hours, on low, approximately 5 hours.
- About half an hour before your meal is done cooking, remove the chicken from the crock pot, shred it into bite-sized pieces, and return it to the pot.
- Add the peas to the crock pot and make the biscuit mix.
- Cut the biscuits out and brush with a bit of milk before baking according to package directions.
- Remove the bay leaves and season to taste just before serving.
- Top each portion of chicken pot pie with a buttermilk biscuit.
This crockpot chicken pot pie recipe makes a generous four to five portions of chicken pot pie (as you can see), but the recipe can easily be doubled or tripled to serve a larger family, or to make plan-overs. (Although, there are never left-overs in my house when I make this!)
